O for Oman (Hummus)

Hummus is available with almost every meal in Oman, whether for breakfast, lunch or dinner. Before I present you a simple and very tasty recipe for hummus, a few words about Omani cuisine and the local breakfast.

The Omani cuisine

Omani cuisine has Arabic and Indian influences in particular. The staple food is rice, which is often served with chicken, fish or lamb. In Oman, oriental spices, herbs and marinades are used for preparation.

Oriental Mezze (starters) such as Falafel (deep-fried balls made from chickpeas), Baba Ganoush (dip made from eggplant and Tahin), Muhamara (spicy seasoning paste made from peppers and walnuts) or Tabouleh (a light salad with bulgur, tomatoes and parsley). Mezze is traditionally served with fresh Flatbread.

Another typical omani dish is Biryani, which originally comes from India. It is a large platter of exotic spiced rice topped with marinated meat or fish. Optionally, you can also add vegetables, nuts and/or raisins to the rice.

Another classic (festival) food in Oman is Shuwa: This is marinated meat (usually: lamb) that is wrapped in banana leaves or palm leaves and cooked in an earth oven for up to two days.

A very popular sweet is Halwa. Halwa is a very sweet and sticky mass made from sugar, nuts, dried fruits and spices such as saffron.

People very often serve dates. Like Halwa, they are a symbol of hospitality.

Breakfast

A traditional and rich breakfast in Oman includes Hummus, Mutabal (eggplant puree), Foul (bean puree), Labneh (cream cheese), yogurt, egg dishes, olives and, of course, flatbread. Of course, fresh fruits and dates also belong on the breakfast table.

Indian dishes such as chickpea curry, Dhaal (lentil curry) and Roti (Indian flatbread) are also eaten in the morning in Oman. If you like it sweet, you should try Sweet Vermicelli (Semyia. These are vermicelli noodles cooked in milk and flavored with sugar, cardamom, nutmeg, saffron, cinnamon and nuts.

Especially hotels, also offer bread, butter, honey, jam, sausage, cheese, cornflakes and several warm dishes that correspond to the "English Breakfast".

Hummus

Hummus (Arabic: chickpea) consists, as the name suggests, of creamy, pureed chickpeas. Other ingredients are tahini, olive oil, garlic, cumin, lemon juice, pepper and salt. Optionally, you can modify this basic variant by adding further spices (e.g. paprika powder), vegetables (e.g. pumpkin, beetroot) and herbs (parsley).

Hummus is very popular not only in Oman, but in many Arab countries. Usually Hummus is served with flatbread and other Mezze. I like Hummus as spread with wholemeal bread or as a dip with vegetable sticks. Hummus is not only extremely tasty, it is also very healthy and vegan. The preparation is very easy, as you can see in the following recipe.

Hummus (Kichererbsenpüree)

Ingredients
  

  • 1 can chickpeas (400g or 250 g drained weight)
  • 1 – 2 cloves of garlic
  • Juice of half a lemon
  • 3 tbsp. olive oil
  • 2 tbsp. Tahini
  • 1/2 tsp. cumin (grounded)
  • 1/2 tsp. salt
  • pepper
  • 1 – 2 stalks of chopped parsley (long leaf)
  • 1 pinch paprika powder
  • 1 – 2 tbsp. olive oil

Instructions
 

  • Drain and drain the chickpeas.
  • Finely chop the garlic.
  • Finely puree the chickpeas with the garlic, cumin and olive oil. The mass should be fine and creamy.
  • If the consistency is too thick, add a little more water.
  • Season the dip with salt, pepper and lemon juice.
  • Season the dip with salt, pepper and lemon juice.

Notes

Hummus goes perfectly with fresh flatbread.
